‘The Generation Trilogy’ first release, TOOMEVARA, is a 10 Year Old Irish Single Malt, matured in bourbon, with a collaboration finish in Château du Breuil calvados. Winner of Double Gold, as overall best Irish Single Malt at the 2019 San Francisco World Spirits Competition. All three of The Generation Trilogy – Toomevara, Haddington and Finisher’s Touch – have won Gold in the Irish Whiskey Awards or the San Francisco World Spirits Competition. 3500 bottles, numbered, and signed by Eunan Ryan. Apple pie in a glass. Soft cinnamon, rich applesauce, a light zesty tang as if those apples were unripe, a slight trace of citrus peel and enough mouth-watering juice to bind the sauces to the fruits. Sandalwood edges round the lingering sauce. Dusty, dry, and even a little yeasty although the sweet green apple tang from the nose still sidles past the finish. One for the grey days.
